Pasta with Ramsons
250 г nests or spaghetti
1 bunch of ramsons leaves
50 g black olives
50 g pine nuts
4 tb.sp. olive oil extra virgin
25 -50 g parmesan
salt
Ramsons leaves wash well and dry out. Black olives cut in half. Grate parmesan.
On hot pan pure 2 table spoons of olive oil and fry out pine nuts until slight gold colour. Add ramsons leaves and stew about 2 minutes. Add black olives and stew 2minutes more. Stir all time, so pine nuts will not burn.
Cook nests or spaghetti.
Add ramsons mix to nests or spaghetti. Serve with grated parmesan on top.
Marinated ramsons
Ramsons about 60 steams
1 l water
1.5 tb.sp salt
1 tb.sp sugar
150 ml vinegar
Soak steams in cold water for 2 hours.
Boil 1 l of water and dissolve in it salt, sugar and vinegar. Chill to room temparature.
Make several bunch with 10-20 steams, tie with cotton tread and put tight into sterilized glass jar.
Pour and cover ramsons bunch with warm marinate.
Leave in fridge for 5-7 days to marinate.
Marinated ramsons
Ramsons steams
1 l water
1 tb.sp salt
1.5 tb.sp wine vinegar
1 tb.sp mustard
10-15 black pepper balls
Wash and soak ramsons steams in cold water for 30-40 minutes.
Sterilize glass jars. Put ramsons steams tight into jar. Boil water and pour into a jar. Leave for 5 minutes. Drain this water into saucepan and add spices and salt. Boil 3 minutes and than add vinegar. Pour marinate into jar and close.
Chickpeas with ramsons sauce
1 cup boiled chickpeas
150 ml milk
2 tb.sp grated parmesan
30-50 g butter
fresh ramsons leaves
white pepper, muskut nut and salt for taste
On low heat mix in saucepan milk, butter, cheese and spices until it will be become thick.
Ramsons leaves cut and mix with salt. Leaves will give juice little.
Mix with milk.
Potato with ramsons
1 buch of ramsons
4-5 boiled potatoes
1 tb.sp vegetable oil
salt and black pepper to taste
Boiled cooled potato peeled off and cut in squares.
Wash and dry ramsons. Mix chopped ramsons with potato, oil and salt.
